Banana Bread/Muffins
- 1/2 cup oil
- 2 cups sugar
- 2 cups flour
- 1/2 cup chopped pecans and/or chocolate chips
- 1 tsp baking soda
- 3 over-ripe bananas
- 1 tsp salt
- 2 eggs or 1/2 cup applesauce
Pre-heat the oven to 350 degrees. Lightly grease your loaf/muffin pan. Mix each ingredient after added with a spoon. Pour mixture into pan (I use an ice cream scoop for the muffin pan – only fill 3/4 way). Bake the loaf pan for 1 hour and 15 minutes. Bake muffins for 30-40 minutes.
